The Maachli Cuisine

Traditional Saraswat recipes, cooked on a mud stove, served on a leaf plate.

Recipes Worth Remembering

Every meal at Maachli is prepared by Mrs. Priya Samant — a keeper of traditional Saraswat cuisine who has spent years reviving forgotten regional recipes. Her cooking is guided by four principles: ethnicity, medicinal properties, nutritional value, and the natural dietary wisdom of the Konkan.

All vegetables are organic and grown within the village. Spices come fresh from the farm's own garden. Food is cooked on a chool — a traditional mud stove — and served in earthen pots, on leaf plates, in the open-air Pavhner dining area. Both vegetarian and non-vegetarian menus are available, shaped by what the season offers.

What Makes It Different

The Craft Behind the Meal

Every element of the dining experience at Maachli is deliberate — from how the food is grown to how it reaches your plate.

Saraswat Heritage

Rooted in the culinary traditions of the Saraswat community, the menu draws on recipes passed down through generations — many of which are rarely found outside family kitchens.

Cooked on a Chool

The traditional mud stove — the chool — imparts a depth of flavour that no modern appliance can replicate. It is the chemistry of fire and earthen pots, unchanged for centuries.

Organic & Local

Every vegetable on your plate is grown organically within the village. Spices are harvested fresh from the farm's own garden — no supply chains, no compromises.

Served on Leaf Plates

Meals arrive on traditional leaf plates in the open-air Pavhner dining space — an experience that connects you to the land, the season, and the meal itself.

Seasonal Menu

The menu follows what nature provides. What you eat depends on when you visit — and that is exactly the point. No frozen produce, no out-of-season imports.

Veg & Non-Veg

Both vegetarian and non-vegetarian options are available, with an emphasis on fresh Malvani and Saraswat preparations that reflect the true flavours of the Sindhudurg coast.
